The heavy-duty lid locks down during cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a simple steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. I like the noise the Presto makes; if it didn't make noise, I might forget about it. I start it on a high setting (7) and lower it to 4 when it starts to make noise. Then I time it for whatever I am cooking. Mostly I use stainless steel bowls like a double boiler, perfect rice every time, and the bowls are easier to clean than the cooker itself. The recipe book says not to cook split peas but if you rinse them well and put two tablespoonfuls of cooking oil on top, they cook just fine, I never see any signs of frothing on the inside of the top after cooking. 8 minutes and they are done, much, much longer with a conventional pan. I think my digestion has improved since I started using the pressure cooker.

In the product description, it states "Comes with rack for steaming food or for canning." Yet on arrival, there is no way to regulate the pressure as needed for canning. I called Presto and they said it was not intended for canning. Now I have to return it.

I bought this for future use, so I haven't used it yet. But examining it, it looks well built and will last for a long time. The price was the best I could find on the internet.

It's pretty and it cooks, but everything burns on the smallest of cooking flames. And it burns evenly across the bottom of the pot, so the heat-plate is distributing the heat. My ex-wife has possession of the fancy Italian pressure cooker which never burned anything. Sweet mysteries of life.

The so-called "cooking times" seem short and very fast, but they don't take into account the time it takes to build up the pressure, which is often longer than the actual stated cooking times. For example, to cook potatoes the time is given as 8 minutes, but it takes 10 minutes to build up the full pressure before you're to start timing, so it's really 18 minutes. Plan accordingly. It's even worse for recipes done in parts where you cool it down to add a second step or things that would over cook if added at the beginning - then you have to build to pressure twice.

The cooking rack at the botton is nice, but no easy way to extract it when it's hot, or thicken gravy, so you have to empty it, reclaim the juice, thicken that, and add back the main dish and stir on low heat.

Since you can't fill the thing more than half way or three fourths to the top (for safety) I sort of wish I got the 8 quart one so a entire cut up chicken and vegetables wouldn't be pushing the limit.

Still, it's easy to clean up and use.
