I have a complete (over 20 piece) set of Wusthof Classics and I really thought that they were the best, until I received this knife as a Christmas gift. Absolutely great! It is very sharp, holds an edge well and is a dream to handle. The only problem that I've had with it is that the blade has stained slightly. I should be able to have a professional knife shop take the stains off, but I never had this problem with my other knives. Overall a fine knife and I plan to buy more, even though I have more chef knives that any one man should.

The product is fine but the handiling of the delivery and your responses to a loyal client were unacceptable and the item was bought as a gift and arrived 2 weeks after the date. This unfortunately was my last ever transaction with Amazon as while the product comes from a third party, You are responsible for the trade. Please erase me from all your data bases. I have been using the Ken Onion (Shun) 8 inch Chef's Knife, Santoku, and Paring Knife for about three months. I have twenty-five years experience as an avid home cook and 20 assorted forged Henkels, Wustoff and Lamson knives.

Since purchasing the Ken Onion knives they are almost the only knives I reach for anymore. They are remarkably sharp and remain that way longer than any of my other knives. I am surprised by the entries that state they are hard to keep sharp. I find that they respond better to a couple passes on my sharpening steel then the European knives. When I get to the point of needing to do anything more than minor straightening of the edge I will buy a Chef's Choice sharpener. While they currently have one designed for Asian knives, they are rumored to have a new Asian sharpener coming out soon that will have one stage for fine sharpening and another for polishing.

I have full collections of F. Dick, Wusthof Classic and Global knives. I have one Shun knife -- the 8-Inch Chef's Knife and it is my knife of choice. This knife's ergonomically designed handle fits nicely in my (man sized) hand. I strongly prefer a curved blade to the Santoku-style straight blades. I find a 10-Inch chef's knives too big for many cutting tasks. This 8-Inch knife is heavier than many other 8-Inch knives - including other Shuns.

The Damascus-style steel is extremely sharp and holds its edge longer than my other knives and doesn't rust like true Damascus steel. When I do sharpen the knife, I use a Chef's Choice Professional Sharpener with excellent results. The purists out there contend that these knives need to be sharpened at an 18 degree angle and not the 20 degree angle of my sharpener. While a smaller angle produces a sharper edge, it doesn't last as long.

The only minor complaint I have with this knife is that it doesn't fit into a standard knife block; however, it does come with its own cool looking stand. This is an expensive knife but it should last a lifetime if cared for properly (e.g. wash and dry it promptly after use). I wouldn't even consider putting any of my chef's knives in a dishwasher no matter what the manufacturer says.

Attractive & razor sharp. The knife most used in our kitchen. Some may find the handle to be a bit small.

Highly recommended!
